AOP Minervois et La Livinière

La Combe Blanche is a 12-ha estate, renovated in 1981 by Guy Vanlancker in La Livinière village. The vineyards are located on the heights of Cru La Livinière, 350m high, on the edge of the Causse, along large mediterranean bush areas. Cinsault, Carignan, Grenache, Syrah planted between 1965 and 1985, while exploring Tempranillo in the warm slopes and Pinot Noir in the cold hillsides. Ambroise is now running the estate with his father, turning his meditative and creative character into wines; labels may be questioning or referring to art, a personal and genuine approach.

The plots reflect the highly fragrant environment of the endemic Mediterranean plants of the Black Mountain. The estate is organic, and the average yied is 35hl/ha. Limited trimming allows the foliage to protect the grapes. The dry and windy climate combined with the altitude which is offering an additional exposure to the wind are saving the vineyards from heavy humidity and mildiou. Vinifications are done per plot. They start with a first extraction stimulated by pumping overs and half way through, the juices are left infusing in the vat to get more complexity and soft tannins.
